Coconut flour freezes well. You can normally use 1/4 cup coconut flour for every 1 cup of wheat flour as it absorbs liquid really well. However, you may have to let it sit a little bit with the liquid to let it soak it up.

We are a wasteful society. I know that members of my family freak out when they see food that's expiration date has expired. Lots of items are still good for a long time past their expiration date.

Freeze Dried Scrambled Eggs & Bacon Review


This morning we ate Mountain House freeze dried scrambled eggs and bacon. We opened the can and the pieces of eggs looked like pieces of foam. The bacon pieces were pretty tiny.
It was easy to rehydrate. We found that half of the can was needed for our family of 7.
We boiled 4 cups of water and added it to half of a can.
So, here's our review:
Overall, we thought the texture wasn't the best. The taste was tolerable. Ketchup greatly improved the taste. My boys and husband decided that we could eat these for survival, but for every day eating they weren't the best.

Crepes for Dinner

Right now everything our family is eating is 90% food storage. We buy a few things at the store, but our purchases are very minimal. Last week I saw that apple pie filling and cherry pie filling were on sale, so I picked up a few cans. I knew exactly what I wanted to make - crepes.

I used this recipe for crepes and had to double it for our large family. I love that the recipe uses my powdered eggs and I always have the ingredients on hand.

For the filling we used cherry pie filling right out of the can. I added apple pie spice to the apple pie filling. I also wanted some whipping cream, but didn't have any on hand. My eight year old mixed up some dream whip topping. Everyone assembled their own crepes and they all were in heaven.

Welcome to I Love Food Storage

I love food storage (or at least I think I do) No actually, I do! My husband and I have spent the past 16 years gathering food storage. The goal has been to gather enough food to create a one year food storage supply. The past few years, I've been experimenting and trying to figure out how to create meals out of my food storage.
In November of 2009, my husband was laid off from his job. Although he was able to obtain another job, we took a significant pay cut. We now make less than 1/3 of what we made before. All of the sudden our food storage has equated to our survival! We have survived mostly on food storage and I'm so thankful to have it.
So, this blog is to share with you, food storage product reviews (what we like and don't like) as well has other resources that are available.
